Another christmas cookie recipe, this one is from my sister Ellen.
Crust Ingredients
- 3 cups flour
- 3/4 cup butter
- 1/4 cup + 2 tablespoons sugar
- 3/4 teaspoon salt
Line jellyroll pan with parchment paper (1/2 sheet pan). Combine ingredients till crumbly and press into pan. Bake at 350 degrees for 20 minutes or until lighty brown.
Filling Ingredients
- 4 eggs
- 1 1/2 cup sugar
- 1 1/2 cup corn syrup
- 3 tablespoons melted butter
- 1 1/2 teaspoons vanilla
- 2 1/2 cups chopped pecans
Beat together and power over crust. Bake at 350 degrees for 25 minutes or until set (like a pecan pie).
Cut into bars (pizza cutter works well)
