Christmas Cookies

Another recipe from Mom, don’t know where she got it originally.

Ingredients (this is technically a half batch, double if you want to be making lots of cookies):

  • 1/2 lb butter (2 sticks)
  • 1/2 cup sugar
  • 2 cups flour

Cream butter and sugar till fluffy, add flour.  Shape into olive size balls.  Place onto ungreased cookie sheet and press down in the center with your thumb.  Fill center with Jam (personal favorite is raspberry or homemade plum). The half recipe makes about 30 cookies which you can squeeze onto one 1/2 sheet pan.  If the dough is too crumbly to form into balls then add 1/2 tablespoon of warm/hot water and mix well, next time turn up the heat before making.

Bake in pre-heated 375 degree oven for 15-20 minutes until golden brown around the edges.
