Another christmas cookie recipe from my childhood. Peanut cookie dough with a hershey’s kiss on top. Takes about 20 minutes of prep and 15 minutes to cook.
Ingredients:
- 1/2 cup butter (1 stick)
- 1/2 cup Peanut Butter (I prefer creamy salted from Trader Joes)
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 3/4 cups flour
- Bag of Hershey’s Kisses
Cream together first four ingredients (butter, peanut butter, white and dark sugar). Add in remaining ingredients (except flour) and mix. Add flour slowly, if using a stand mixer the dough should start pulling away from the side of the bowl.
Preheat oven to 375 degrees. Roll a tablespoon or so into a ball and roll into white sugar, place on a greased cookie sheet with some space (on a 1/2 sheet pan you can easily fit 24 cookies).
Put in oven and cook for 10 minutes. While it’s cooking unwrap the kisses. Gently press the kiss into the center of the cookie and press down. Return to oven for 2-5 minutes, dough should be barely browned. Remove from oven and let cool in pan or on rack.
